What the heck is chufa, you might wonder? Why so many options? Good questions.
Chufa nuts are little tubers that taste nutty and are a key ingredient in the Spanish summer beverage 'Horchata de chufa'. We first got curious about chufa nuts when Dan Brisebois of Ferme Tournesol published this great blog post. Check it out! You, too, may feel intrigued by these oddities.
The reason for so many options is because our friend and farm neighbour Telsing Andrews (formerly of Aster Lane Edibles, you'll see some of her breeding projects featured on our website) gifted us her broad collection of Chufa varieties. We grew them all out, and here they are. Is there a discernible difference between them? Not a massive one, but it's kind of fun and maybe you're a chufa aficionado.
